This is one of my favorite recipes and I think the one that most people have re-created. It’s great because its nut-free and a lot easier than most dairy-free mac & cheese recipes out there.
I like to make this for guests because it usually impresses 🙂 enjoy!

1 cup of the sweet potato
1/4 cup nutritional yeast
2 tbs oil of your choice
1/2 cup unsweetened nut milk
1 clove garlic minced
1/4 tsp salt
pepper to taste
- Cut up large cubes of a medium sweet potato and boil for 20 minutes or until soft
- Drain and mash the sweet potato. Measure out 1 cup. If there is extra, save the rest to cook or bake with!
- Blend all ingredients together
- pour over your favorite pasta!
