Vegan Cream-Cheese Pesto

I grew up eating pesto – a LOT of it. My parents had this awesome pesto recipe that was super creamy and the secret ingredient was cream cheese. I always loved it better than other pestos. I wanted to recreate a vegan version to share with all of you. So here it is! Vegan Cream Cheese Pesto.

Ingredients

  • 1 1/2 cup fresh basil

  • 1 cup kale

  • 1/4 cup vegan cream cheese (any cream cheese is fine)

  • 1 tbs pumpkin seeds (any seed is ok)

  • 2 tbs nutritional yeast

  • 3 tbs avocado oil (or any oil)

  • 1/4 tsp salt

  • pepper to taste

Directions

  • Cook pasta of your choice
  • While the pasta is cooking, blend the ingredients together to make the pesto.
  • Blister some tomatoes in the oven for added flavor
