I grew up eating pesto – a LOT of it. My parents had this awesome pesto recipe that was super creamy and the secret ingredient was cream cheese. I always loved it better than other pestos. I wanted to recreate a vegan version to share with all of you. So here it is! Vegan Cream Cheese Pesto.
Vegan Cream-Cheese PestoCourse: Dinner, LunchCuisine: Italian, ComfortDifficulty: Easy
1 1/2 cup fresh basil
1 cup kale
1/4 cup vegan cream cheese (any cream cheese is fine)
1 tbs pumpkin seeds (any seed is ok)
2 tbs nutritional yeast
3 tbs avocado oil (or any oil)
1/4 tsp salt
pepper to taste
- Cook pasta of your choice
- While the pasta is cooking, blend the ingredients together to make the pesto.
- Blister some tomatoes in the oven for added flavor
